Ingredients for 6 Gallons

Hops

Yeast

Procedure

Mash-in with 11 Qt of water at 140°F. Target temp 130°F
25 min protein rest
Add 5 Qt boiling water. Target temp 148°F
1 1/2 hr Starch Conversion. Decoct 2 qt & heat to boiling to keep temp ~150°F
Mash-out to 170°F
Sparge with about 14 Qt water at 170°F
Skim hot break prior to first hop addition
Ferment at 65°F
Dry Hop in secondary, 14 days
Prime with 195 grams priming sugar

Brewers' Comments

This beer has a hop nose more typical of Pilsner, which makes a bit overdone for a strict interpretation of the Kolsch style. However, it goes a long way with the hop-heads typical of any brewing club.
