This beer won first place in the 2001 Los Angeles County Fair

Ingredients for 10 Gallons

Malts

Hops

Yeast

Water

Procedure

Mash-in with 6 gallons of water at 175°F. Target temp 155°F
90 minutes Starch Conversion.
Mash-out to 170°F
Sparge with about 10 gallons water at 170°F
Skim hot break prior to first hop addition
Ferment at 62-65°F
Keg 8 gallons, force carbonate.
Prime 3 1/2 gallons with 88 grams priming sugar for bottling

Judges' Comments

Floral aroma. Good balance of hops and malt. Maybe not quite big enough. I like this one. Best so far.

Brewer's Comments

This beer had a good hop bite without being over the top. I couldn't decide if it was better described as a pale ale or an IPA. the judges eventually answered my question by giving it a first place in IPA and second in Pale Ale.
